Instructions

  1. Ahead of time, cook black lentils as per directions on package (25min)
  2. Also prepare a batch of the vinaigrette (double or triple quantities) mixing all ingredients in a glass container with lid and shaking vigorously.
  3. When ready to serve, place your cabbage at the bottom of your plate. Add the cooled lentils and mix together.
  4. Add red onions, spring onions, chopped date, almonds, sunflower and pumpkin seeds, and sprinkle with nutritional yeast.
  5. Drizzled with a small amount of vinaigrette and enjoy! option to decorate with basil leaves.
