Probably the most delicate part of this recipe is finding the "Sushi Grade" Tuna, so you can feel confident to eat it raw.
Then all you have to do is cut it in small cubes and prepare the marinade, with a few simple ingredients. Chop your avocado and use a kitchen "ring" to present it really nicely on a plate.

Instructions
- Carefully slice and chop your raw Tuna fillet, creating very fine cubes. Reserve.
- In a small bowl, put all remaining "tuna ingredients" (except for the sesame seeds and microgreens) and whisk to create the marinade.
- Pour over the Tuna cubes, toss and turn, and reserve in the fridge while you prepare the avocado base. The longer you leave it in the fridge the better the marinade (more infused).
- Prepare the avocado base: Cut your avocado in very thin chunks, similarly to your tuna. Place in a bowl and add salt, lemon juice and olive oil. Toss gently but don't mash it (preserve the chunks)
- Dress your plate using a ring (I used a 4" square one, but feel free to use a round shape if you prefer). With a spoon, start placing the avocado mixture down the bottom. Gently flatten.
- Then do exactly the same with the tuna mixture.
- Remove the ring with caution, and sprinkle sesame seeds and microgreens to add a great pungent flavour and more nutrients!
