  1. Optional but recommended step: Place mini cucumbers in a large bowl and sprinkle with salt, then let sit for 10min while making the dressing. It will release water.
  2. Whisk together in a small bowl the dressing ingredients: ginger, garlic, rice vinegar, honey, soy sauce (and sriracha). Add scallions and sesame seeds.
  3. Drain the water from cucumbers and add them to the dressing.Toss to coat.
  4. Either serve immediately or let marinate in the fridge for a few hours- up to 3 days.It is a delicious addition to a poke bowl!
HOW TO CUT SPIRALIZED CUCUMBERS
  1. Cut off the ends of your cucumbers, then place two chopsticks on both long sides of the cucumber.
  2. Then, make thin diagonal cuts along the cucumber, stopping when your knife hits the chopsticks. Flip cucumber over and make the same cuts on the other side.
  3. That's it! Beautiful spiralized mini cucumbers!
