Corn is a vegetable that is rich in fiber, vitamins and minerals.However corn can also spike your blood sugar levels, so I would consume in moderation. I would also always chose Organic when it comes to corn as it also means it is non-GMO.With that in mind, I am sharing today a simple and fast recipe of a delicious corn soup based on 2 ingredients (onion and corn), that turns out creamy and super satisfying!!

- In a saucepan, sweat the onion in oil with rosemary on medium heat for about 5 min. Add garlic and corn and continue sautéing for 1 min.
- Add broth (or water) and bring to a boil. turn off the heat (the veggies are just cooked, and will preserve most nutrient benefits. no need to over cook!
- Transfer to a blender and retain some of the liquid to adjust consistency of your soup according to your taste. Blend and adjust with liquid and salt.
