This asparagus soup takes no time to make and benefits from the nutrient dense addition of the raw arugula and kale that will just wilt in the heat of the soup. This will add tanginess, bitterness to your soup, that will be balanced by the coconut milk. So easy to make, and adjustable in many ways to your taste, with a drizzle of lemon juice, a drop of maple syrup, a pinch of cayenne pepper... Have fun creating your own healthy recipes.

  1. In a pan, pour the broth and add asparagus, garlic and salt.
  2. Cover. Bring to a boil and simmer for 5min.
  3. Transfer to a high speed blender. Add in the kale and arugula, raw, with coconut milk. Pulse until smooth. Taste and adjust.
  4. Garnish with sesame seeds, and arugula.
