- Place chopped onion butternut cubes in a pot, with olive oil and sauté for about 5 min until starts to brown.
- Add all spices and salt and further cook for 1 minute. It should start smelling amazing.
- Pour in the water (or broth) - keeping the coconut milk for after the cooking process.
- Cover and pressure cook for 5min (or cook on the stove for about 15min until squash is tender). Release the pressure and transfer the soup into a high speed blender.
- adjust the liquid amount to your taste.
- when ready to serve pour a tbsp of coconut. ilk over your soup and gently blend with a spoon.
