  1. THE BEET TARTARE: Cook the yellow beet (either steam or place in aluminium foil in oven for 40min), peel and cut into small cubes. reserve. Take the pickled red beet and cut into small cubes too. reserve juice for the cashew cream.
  2. PREPARE THE CASHEW CREAM: In a high speed blender, place cashew, beet juice, nutritional yeast, garlic, olive oil and a pinch of salt. Blend until smooth and adjust with more juice to reach desired consistency.
  3. PLATE: in the center of a plate, place a large spoon of cashew cream. Top with diced beets, and decorate with sesame seeds, chopped scallions, and arugula leaves (or micro greens)
