  1. Heat up a pan with olive oil. Add the onion, brussel sprouts, then spinach. Add spices and sauté for about 2-3 min.
  2. Meanwhile beat the eggs in a bowl, move the veggies to one side of the pan and drop the beaten eggs on the other side. Scramble the eggs with a wooden spoon until just before desired consistency and fold them into the rest of the veggies for the finishing touch.
  3. Transfer to bowl , add a fresh basil leave and enjoy!
