On a journey of ANTI-INFLAMMATORY DIET to heal your gut, regain hormonal balance and/or reverse insulin resistance, staying OFF grains will be an important step. This simple 1-pan CAULIRICE & GREENS recipe is a delicious one that I share with a lot of my clients to avoid frustration and truly enjoy eating while they are on this restrictive eating period in their life. Try it with a side of Grilled wild caught Salmon, or organic chicken breast, and make it again and again, with different greens, herbs, and spices!

Instructions

  1. Place the cauliflower florets in a food processor and with little pulses, turn it into "rice-like" pieces.
  2. In a heated pan with ghee, place the "cauliflower rice" (caulirice), the snap peas, garlic, salt (and pepper), and let cook on medium for about 3 minutes until it starts browning.
  3. Turn DOWN the heat to low, add the broth (or water), cover and cook for another 6 minutes. You still want it bright and crunchy!
  4. Turn OFF the heat and add spinach and fresh Basil. Toss and turn to let them"wilt" in the heat of the dish. Add a squeeze of a lemon and serve with a side of Grilled Fish :-)
