Instructions

  1. Cook Quinoa as per package instructions (1 1/2 cup water for 1 cup quinoa - 10min cooking covered/10min simmering covered)
  2. Meanwhile, chop and slice all ingredients as indicated and place in a large bowl. do not put the finishing ingredients yet.
  3. Prepare the Thai dressing. In a glass container place all dressing ingredients, close lid and shake vigorously.
  4. Add the quinoa to the veggies and mix with a pair of tongs. add dressing to your liking and add finishing ingredients. Enjoy!
