Ceviches are so refreshing for the warmer months of the year! They are very easy to prepare and make a very delicate starter. Perfect recipe to impress your friends.
The ingredients in this ceviche are simple, fresh, and bright. Perfect balance of sweetness, creaminess and citrus, with the very tender meat of wild caught halibut. And that unique bitterness of cilantro.
You could try it with shrimps too...

- Cut your fresh fish fillet (no skin) into small cubes.
- In a glass bowl, stir together the raw fish, lime and lemon juice. cover and reserve in the fridge for about 30min. The fresh Halibut will "cook" in the citrus juice.
- Meanwhile chop your mango, dice your avocado, chop your cilantro and red onion.
- When ready add all these ingredients to the lemony fish mixture, and gently combine.
- If too sour, I like to add a drizzle of maple syrup and a pinch of salt. Taste, adjust and ENJOY!
