This is a recipe I created after tasting a delicious crab salad in a restaurant this week. I loved it so much I had to try to replicate it with my own twist. What you will particularly enjoy, if you decide to make this recipe is how light and fresh this salad tastes. What really seduced me was the delicate flavour infused from the fresh mint, basil and cilantro. It is important to source a good crab meat (wholefoods have a great premium crab meat - in a can!). The addition of fresh grapefruit and cashew nuts will add different layers of flavours to create a truly balanced dish. One that is simply irresistible. Great to serve as a starter too!

Instructions

  1. Prep all your salad ingredients, as per instructions.
  2. Prep your dressing. In a glass container with lid, mix all dressing ingredients together. 
  3. In a large bowl, place all salad ingredients, add the dressing and combine.
  4. Taste and adjust seasoning.
  5. I love to add a drizzle of toasted sesame oil over this salad when serving, and extra sesame seeds, microgreens... Get creative!
