This dessert is reminiscent of my childhood. My mom would make us "rochers a la noix de coco" very often as an after school snack.I was recently helping a client break up with some of her recurring sugar cravings, and I couldn't just say to her "stop eating desserts, they're bad for you", "forget anything sweet"- NO. I had to meet her where she was, and offer her a transition into a life with new, low-sugar habits, to slowly get her tastebuds and brain less calling for so much sugar.I was looking for a recipe that involved some kind of protein, healthy fat and fiber (as I always do), with low amount of natural sugar. And Gluten-free!Something that would be easy to make (4 ingredients- 5 min prep, 12 min in oven) and tasty!!I took an old Coconut Macaroon Recipe I had, and lowered the amount of sugar to 1 TBSP and swapping the refined for a natural sugar source: coconut palm sugar.It came out really nice!

  1. Turn oven on 325F and prepare a baking tray with parchment paper.
  2. In a high speed blender, mix together coconut and almond flour. reserve
  3. In a mixing bowl whisk together the egg white with a pinch of salt. after 10 seconds, add the sugar and continue until the eggs whites are fully raised.
  4. Gently combine the coco/almond mix with the egg whites (option to add the vanilla here)
  5. Using a spoon, create individual balls, about 12, and bake for 12 minutes! I like to add 1 more minute at the end on grill/roast to brown them up at the top.
  6. Take out and enjoy warm or cold.
  7. Option to dip into melted dark chocolate... But you didn't hear me say that!
