Tuscan Chicken is a delicious meal made with heavy cream and eaten with pasta or rice.In this version, I created a heath-promoting version of Tuscan Chicken replacing the cream with a mix of organic oatmilk & coconut milk, and using Spaghetti squash instead of regular spaghetti!It turned out incredibly tasty, and as addictive as the Gluten and dairy loaded version. Next time why not create a "spaghetti squash carbonara" in the same healthy format!!

- Pre-cook the Spaghetti squash in the oven for 40 minutes at 420 F (squash cut in half and placed face down on lined baking tray.
- In a large pan, cook your chicken slices in olive oil with a pinch of salt on one side until browned and almost cooked through (about 4 min). add the fresh Rosemary.Turn and further cook until no more pink, Reserve on parchment paper on your cooking table.
- in that same pan (don't wash it!), cook shallots and garlic for 1-2 min on medium high. Then add dried tomatoes keeping a bit of the oil from its container and cook for another minute, stirring regularly. Add the non-dairy milk and turn the heat to low to let it thicken.
- Add the cooked chicken back in the pan, and drop in the spinach too. Stir well until combined. Turn the heat off and reserve covered.
- Meanwhile take out the spaghetti squash from the oven, let it cool down a bit. With a fork, remove the seeds, and start peeling the flesh that will start looking like spaghetti! For this recipe you'll only be using half of the squash, that you will just combine with your tuscan chicken and serve warm, with a drizzle of lemon and extra salt& pepper for taste. Option to add fresh basil!
