A light salad, full of flavours and with a spicy kick, which you can enjoy with a side of grilled chicken thighs. (organic, no hormones, no antibiotics)

Instructions

  1. Prepare the dressing, mixing all dressing ingredients vigorously. Reserve.
  2. Using a chopping board and a sharp knife, chop your cauliflower head in tiny bits. reserve. Chopped the other ingredients.
  3. In a large mixing Bowl, add the finely chopped cauliflower, parsley, mint, spring onions, apricots and jalapeño (if using), and combine.
  4. Place the cauliflower mixture over a bed of greens and add flavours with the lime dressing !
