I created this salad as a nutritious base for a simple grilled Fish fillet, but feel free to make it on its own, or alternate the sources of protein: try a poached egg, or organic grilled chicken thighs instead!
I particularly like the combination of flavours from the mango and coconut and how it blends in with the bitterness of the watercress and spinach. The avocado offers that creaminess and extra healthy fats, making it a nutrient dense and complete meal, to support your health!
Really one of my favorite salad mix. That I like to keep simple with what I call my Detox dressing: olive oil and lemon, with a pinch of salt!

Instructions
- Start with the Fish Fillet. Season your fillet with salt and place it skin up on a hot pan, with olive oil. You should get a nice golden colour after 5 minutes. Time to flip on the skin side and cover to speed up the cooking process (Another 5 min, depending on thickness of your fillet.)
- Meanwhile prepare your plate with watercress, spinach, avocado, mango, coconut shavings. season with a pinch of salt and a drizzle of olive oil and lemon juice.
- Place your fish at the center of your plate, and garnish with spring onions and micro greens! Enjoy
