How to turn a simple quiche into something truely delicious and nutritious! You may have tried salmon spinach quiches before, but the addition of sweet potato creates an irresistibly sweet finish that combines perfectly with the nuttiness of walnuts. From a health perspective, smoked salmon, walnut, coconut milk, sweet potato, spinach, provide you with everything your body and brain cells need to strive, namely Omega 3 fatty acids, vitamin D and B12, fiber, anti oxidants, magnesium, potassium, iron and even Vitamin C!Did I mention it is very easy to prepare, and impossible to miss? - Preheat the oven to 375F. Heat up a deep pan, and drizzle olive oil . Add sweet potato cubes, salt and pepper, and sauté for 5-8 min until soft. Add spinach and continue wilting spinach for 5min, stirring regularly.
- Turn off the heat, let cool down and add smoked salmon, walnuts, cream and coconut milk, plus the eggs. Mix together until evenly combined. and set aside.
- Roll out your dough and place it in the tart mould. Add the quiche mixture and sprinkle some parmesan on top. I like to add a few salt flakes.
- Bake in the oven on 375F for 30-40 min until golden. (enjoy warm or cold with a green salad!)
