  1. Wash, peel and cut the first 6 ingredients on the list. Heat up a large pan with coconut oil and saute onion, garlic, carrot, leek, with a pinch of salt for about 5 min.
  2. Add mushrooms, lemongrass, and curry paste and continue to cook on medium heat, tossing and turning regularly for about 5 more minutes.
  3. Add broth and coconut milk and bring to a short boil. Cover and let simmer for about 20minutes to infuse flavours.
  4. Meanwhile cook the rice vermicelli and drain water. Add vermicelli to soup. Remove lemongrass. Taste and adjust with sea salt. Add a squeeze of lemon juice, a dash of honey fresh cilantro leaves.
