Top of my list when looking for a tasty soup. The richness of the pea combined with fresh mint makes it a real treat! Sweetness, and natural creaminess makes it totally addictive and yet so healthy and nutritious. I added zucchini, onion, and a delicious broth to enhance its nutrient density and make it a truly healing soup. But there are many ways to enjoy a pea&mint soup. Here is my version...

Instructions

  1. In a large pan, sauté the onion in oil for 2 minutes. Add the garlic and zucchini and sauté for another 3 minutes.
  2. Thaw the frozen green peas. reserve
  3. Add broth and salt and bring to a boil. Cover and simmer for 5 minutes.
  4. Transfer to a high speed blender, add the peas and mint. Pulse until reached desired consistency. Taste and adjust.
  5. Garnish with a few leftover peas and mint leaves.
