Lentils will offer you some extra protein and fiber, and are a great source of iron and folate! The combination of both, flavoured by the curry and ginger spices, and made even creamier with the coconut milk (great source of fatty acids) will make this a great recipe to pull out on a Sunday night. PRESSURE COOKING METHOD (INSTANTPOT)
- Add the olive oil to the Instant Pot, and press "Sauté". Add the onion, curry powder, and ginger and stir just until fragrant, about 2 minutes. Press Cancel to stop the cooking cycle.
- Add the sweet potato, celery, lentils, broth and salt. Stir well to ensure the lentils are covered in water, then secure the lid and close the valve to Sealing. Select Manual/Pressure Cook to cook on high pressure for 1 minute.
- When the cooking cycle is complete, let the pressure naturally release for 3 minutes, then move the steam release valve to Venting. Remove the lid and add spinach and coconut milk. Stir and leave for an extra 2min. Serve with a few broccoli sprouts or micro greens of your choice!
