I don't normally post dessert recipes, as I like to take my clients and followers on a journey towards less "sugar" ... Yet on rare occasions, when I come across a dessert recipe with low sugar, no gluten or dairy that I find delicious and not too complicated, I like to share. YES, this one is easy, however hard it is to imagine.... It involves simple ingredients. It takes 20min max to prepare and set in the fridge to redensify. What I love about this recipe (which I created , inspired by two other recipes I was curious about), is that one day it could be matcha, the other day cacao, or red berries... you can really reuse it and transform it! But why not follow these steps first and impress yourself! Grab your ingredients, a food processor, and a tart mould or baking ring and go!

Ingredients

FOR THE CRUST (very similar to my energy balls recipe:-)
FOR THE MATCHA CREAM (it will thicken with the agar-agar)

Instructions

PREPARE THE CRUST (I used a 6 inches round tart mould, with removable bottom, and a 3inches square "baking ring"
  1. Place all "crust ingredients" in a food processor, and pulse until a ball starts shaping.
  2. In your chosen mould, press the dough to shape your crut.
  3. Reserve in the freezer (while making the cream).
MAKE THE MATCHA CREAM
  1. Place agar-agar in a saucepan with water and bring to a boil for 1-2minutes. reserve.
  2. Put all "cream ingredients" into a food processor and blend on high until you reach a very smooth consistency.
  3. Add your gel-like agar-agar, and pulse again.
CREATE YOUR TART (I promised you "simple"!)
  1. Take out your crust from the freezer. Pour your Matcha Cream inside. Reserve in the fridge for 1hour!
  2. Decorate with red fruits, a few fresh mint leaves and serve this tart FRESH! I'm going to have another piece right now.....
