This has to be my favorite VEGAN NUTRIBOWL. A mix of raw and cooked, cold and warm, sweet and sour, with that asian twist.
Good sources of protein and essential vitamins and minerals. Healthy fats and lots of essential plant fibers!
Note: this recipe supposes that you have previously cooked quinoa and lentils leftover. If you need to cook these, please allow 20min - as per packaging directions- to have it ready for your recipe.
Also, I gave you a large amount for the dressing. You don't have to use it all! Only what allows you to truly find pleasure in eating this 100% plantbased salad for lunch. We still want to keep "added sugars" low, even when all natural and healthy!

MISO SESAME GINGER DRESSING
Instructions
- Start with the TOFU: heat up a pan, with oil. Meanwhile towel dry tofu bar and cut in cubes. Season generously with salt and place in the hot pan. Cook 3 min on each side until golden and crispy.
- Meanwhile prep all your RAW VEGETABLES: slice beet and cabbage with a mandolin if you have, or use a sharp knife. Slice and scoop out your avocado.
- Prepare your DRESSING: place all ingredients in a glass container with lid and shake vigorously to emulsify.
- It's time to prepare your plate: start with the base of kale, and add quinoa, lentils, beet, cabbage, avocado and warm tofu. Drizzle the amount of dressing desired. no added salt or oil needed!
