I’m in love with this vegan poke bowl recipe with tofu, it’s quick, easy and completely addicting!Traditionally, poke bowls are made with raw tuna or salmon, but we’ll be using cubed organic tofu, as source of vegan protein. This Poke recipe is healthy, satiating and tastes great!Tofu poke bowls are perfect for a healthy lunch or dinner and can be prepared ahead of time and enjoyed as a fun "make your own" family mealThere’s no cooking needed (aside from the quinoa) and it’s so easy to throw together!If you like Avocado, add a few slices to your bowl, for extra healthy fats:-)

Instructions

  1. Cook the quinoa as per packaging directions. 20min.
  2. Meanwhile, whisk all dressing ingredients together and reserve.
  3. Towel dry the tofu and cut it in small cubes.
  4. While quinoa is cooking, prepare all your veggies. Wash, peel, chop, slice, as directed.
  5. When ready to have lunch, place a cup (or more!) of quinoa in a bowl. Then add all toppings all around, and finish with the Tofu in the middle. Pour dressing to your taste!
