Instructions

  1. COOK THE QUINOA: In a saucepan, add 1 cup quinoa to 1 & 1/2 cups water. Bring to a boil then reduce heat, add turmeric and a pinch sea salt & pepper, and simmer covered for about 15 minutes. Reserve.
  2. PREPARE YOUR TOPPINGS: Spiralize (or simply grate) zucchini, grate carrots, chop beetroot, and thinly slice cucumber and avocado.
  3. CREATE THE BOWLS: start with a base of turmeric quinoa and place all toppings on top. Finish with a scoop of Hummus in each bowl.
  4. THE DRESSING: Place all dressing ingredients in a small glass container with lid. shake vigorously and drizzle over buddha bowls before serving. Finish with cilantro leaves and sesame seeds.
