HOW TO MAKE THE ZUCCHINI ROLLS
  1. Using a mandolin, create very thin slices of zucchini- lengthwise. Place a few slices side by side on a sushi mat to form a sheet. As if you were making sushi rolls, layer the ingredients one on top of the other on the front half of the mat. Roll the zucchini slices firmly around the veggies to form a long roll.
  2. Place the long roll on a cutting board and carefully cut into individual rolls. Sprinkle with sesame seeds.
  3. Dip your rolls in coconut aminos for a real treat!
