I am not a big fan of dressings in general, as they are normally loaded with sugars and honestly a salad can taste so good with olive oil, lemon and sea salt crystals.
That being said, I wanted to use fresh Basil to make something new and tasty.
I came across this basil pesto vinaigrette which I adapted to my taste to share with you. It is healthy, and absolutely delicious. It is the perfect salad dressing to have in your fridge for the week and make raw vegetables taste better!. You could even pour it over a cold pasta salad!
I will make a kale/Brussel sprout salad tomorrow to combine with this dressing...

- Place all ingredients in a Food processor and blend until you reach desired consistency.
- Taste and adjust if needed. a drop of apple cider vinegar might be a good addition...
