It's rare to come across a baked dessert recipe that is gluten-free, dairy free, grain free, and yet perfectly sweet, chewy and addictive!
I am not a baker, and I am a strong advocate of a minimum sugar diet, but it is nice to have at hand a good recipe that we can enjoy, especially with the kids, every now and then. I recently found this recipe and my 8 year old made it (on his own!).
We always have tahini (sesame paste) in the fridge as I love making different types of hummus. So I chose that this particular recipe because it was using tahini. If you don't have it at home, by all means, try it with almond or peanut butter instead:-)

Instructions
- Preheat oven to 350F. prepare your baking sheet.
- In a bowl, mix together with a wooden spoon: egg, sugar, tahini, coconut oil and vanilla until smooth.
- Then add the dry ingredients and continue to mix together until you reach a cookie dough consistency.
- Add Chocolate chunks.
- form small balls in the palm of your hand and place on baking sheet. flatten the top with two fingers.
- Bake for 9-10 minutes until lightly golden. Option to sprinkle sea salt Crystals when still hot, then let cool down. Enjoy!!
