Instructions
- In a pot, sauté onion, garlic and zucchini (with salt) for 3 minutes on high heat until fragrant.
- Add water to level, cover and cook on medium heat for 5 minutes.
- Transfer to a high speed blender (with just a small amount of the cooking liquid-0 you can still add more afterwards) and add fresh mint leaves. Blend until smooth
- Taste and adjust with water, salt. Option to add a drizzle of lemon juice
- Serve in individual bowls, adding cracked pepper, lemon zest fresh mint and pumpkin seeds if desired.
