This is one of my favorite cake recipe. A Gluten Free cake that works!! We all know it's not always the case, but trust me with this recipe, you will not be disappointed...it is not too sweet and so moist! with the outer crust lightly caramelised and crunchy . Truly one of the best orange cakes I've had.

  1. Pre-heat oven to 160 °C/320F (with fan/convection)
  2. Place the butter, sugar and orange zest into a large mixing bowl and beat with a wooden spoon until light and creamy.
  3. Add the eggs, one at a time, and continue beating until completely combined.
  4. Blend the hazelnuts in a high speed blender to form a hazelnut powder (I like to keep it crunchy, not totally flour-like). Transfer to a mixing bowl and combine with flour and baking powder. Stir to combine.
  5. Add half of the hazelnut mixture into the butter mixture, until just combined.
  6. Add the orange juice, yogurt and poppy seeds and stir until combined.
  7. Fold in the remaining hazelnut mixture until just combined.
  8. Butter your cake mould and spread 1 tbsp of brown sugar all around (it will caramelise during the baking process). Pour the batter into the cake mould and top with extra crunched hazelnuts, orange zests, brown sugar and sea salt crystals.
  9. Slow bake for 1 hour and 20 (on 320F)
  10. Remove and let cool down before tasting a slice of this deliciously moist cake!!
