Very moist, nutty bite, sticky top and zesty taste!A delicious mini cake recipe to impress your guests with very little efforts. Using GF flour, opting for olive oil instead of butter and very little sugar, this cake will take out most of the guilt of indulging in this mini dessert or afternoon snack! The flavours of orange (juice and zest), cardamom and pistachio will leave you wanting more, though...Side note: I used Grass-fed whole milk, but if you want to make this recipe dairy-free, you should definitely swap it with coconut yogurt!It won't change much...

  1. Pre-heat oven to 360F (180C). and grease a large muffin tin.
  2. In a small bowl prepare mix the dry ingredients together (flour, baking powder and soda, salt and cardamom. reserve
  3. in a large bow whisk together the wet ingredients (yogurt, olive oil, egg, juice, zest, vanilla extract) until smooth. Add sugar and combine.
  4. Slowly add the dry ingredients and whisk until smooth. Add pistachios and pour into each muffin slot.
  5. Bake for 15min. Meanwhile in a saucepan combine honey and orange juice and reduce on medium heat.
  6. Take out the muffins to cool down on a rack. brush with the honey glaze and when cold, sprinkle with powder sugar (optional) pistachios and orange zests! ENJOYYY
